Breelyn has spent over 15 years studying the craft, culture, and science of agave spirits, earning advanced CRT and WSET certifications along the way. She isn't just pouring drinks; she’s sharing the soul behind the bottles. From the crisp notes of a Highland Blanco to the deep complexity of an aged Extra Añejo, Breelyn will guide your palate through a sensory journey perfectly paired with Chef Irwin’s menu. Come thirsty, leave inspired!

2026 Agave Pairing Dinner Menu
Culinary Artistry by Executive Chef Michael Irwin
Executive Chef Michael Irwin has designed a seated, multi-course dinner that pairs High Country flavor with premium expressions from Maestro Dobel and Reserva de la Familia.
Each selection is built around balance: acidity, heat, smoke, richness, texture, and the character of the tequila in the glass. The evening moves from bright, crisp agave into deeper aged expressions, including the Maestro Dobel Diamante Breckenridge Agave Festival Select Barrel and Reserva de la Familia Extra Añejo.
